Help me understand knock count a little more!

So I've been data logging a guys car after he hooked up nitrous. And looking for knock. I'm using tts data logger.

The knock count is pretty normal. Goes up on startup. Then when you punch it, it goes us a 1000 or so when you switch gears. And doesn't progress with rpm.

It's a cam only car with nx jets, zex control thing and nos fogger. Which brings me to another question. Will this cobbled nitrous kit be efficient? Is it safe? How do you determine jet size?

I was always told if it doesn't keep counting up then it's not knock?

Just seeing if you guys can help me understand knock count a little better.
