Looks very nice. I'm getting ready to do the same to my LE2 intake, except in black. What kind of paint did you use?

I used duplicolor ceramic hightemp engine paint. I stripped it down with aircraft paint stipped and used brake cleaner then washed it with dish soap, let it dry then painted it. B4 it was completely dry i used a razor gasket remover and scraped the top fins, after it was dry I sanded them down. It took awhile but looks good.

is there any way to polish the stock intake and fuel rails without taking them off?

Not really, as your going to have to get everything or its going to look terrible. I would reccomend taking them off, or waiting until you do take them off to do it.
