So I recently had my car run put of coolant somehow and it got really hot. Now it keeps spitting white smoke at intersections. Anyone got any ideas?

Sounds like a set of headgaskets are in your future. Also, have your heads checked for warpage and cracks.

It's weird because the oil and coolant aren't mixing. It stays fine when driving normal, but when I dumped the clutch and spun it around a turn it spikes to 250 degrees.

The gasket prob only blew out between the coolant passage and the cylinder.

Then don't do that...

Shortly thereafter from continued running it will whipe the rings and then get in the bottom and eat bearings, been there done that

The car is off the road currently. What are the odds that the heads are warped or cracked? Car has 135k on it if that matters.

Depends how bad you overheated it. My original set were both cracked at 150K with no prior known overheating.
