The GM code for Sebring Silver Metallic is "13". That number should appear on the Service Parts tag, although it will have a letter with it that indicates it is the main body color.

I found a 13Q and a 13U in my glove box

13Q which I believe indicates the main body color, 13U, which I know indicates the "upper" body (roof panel) was also silver (as opposed to the available black roof and mirrors). GM also uses another code that may appear on the tag, in this case its "WA9566".
And yes, Sebring Silver Metallic is the only silver color offered 95-97. Same color was used on the Firebirds, but it was called Bright Silver Metallic.
Sounds like you are going to have the spoiler and hood painted using only the paint code. Too do it right, the existing paint (which may be 20 years old if it hasn't been repainted at some time) should be computer matched, and when the hood is painted, adjacent areas (tops of fenders, nose cover) blended in with the same color. I had my Ram Air hood done this way. They ended up doing the whole nose cover because of stone chips, and the tops of the fenders. At the time, my paint was only 6 years old, and 14 years later everything still matches perfectly.
Silver (and other light colors) metallic seems to be a difficult color to match, not so much from the color perspective, but from the point of view of getting the metal particles to "lay" the same as the adjacent panels, to avoid a shadowing effect.
