I bought my stainless lines for my C5 conversion from Tobin at Kore 3. I had a great experience with him.

Kore3 like mentioned before or http://www.hotpart.com/
Can somebody throw up a parts list for what's needed for this conversion? I've thought about upgrading the brakes on my Z for a couple reasons. My front pads are thin and the rotors have a pretty good lip on the edge and while I'm in there... why not upgrade.

Depends on how fancy you want to get with it, but here is my list. Also LS1 brakes came on all 98+ F-bodies, not just LS1s.
What You need:
Steering Knuckles - I paid 70 for the pair from e-bay, Tennessee some thing or another is who I got them for, they have a 100% rating and they said the check all spindles prior to shipping.
LS1 Calipers - You need these, I got some off a 20K mile 02 SS. An option is also to get a set of Corvette Calipers, they say the casting process makes them stronger but I have read the piston diameters are actually smaller then the factory F-car Stuff.
Rotors/Pads- Given, lots of option.
Brake Lines - You have some options here, some people have modified the LS1 lines to work, some people have used factory C5 Vette lines and some have used stainless lines meant for a C5 Vette brake conversion on a LT1. The latter is what I am doing.
Optional Stuff.
Ball Joints - Inspect for wear, good time to change them.
Wheel hubs - This is a biggie, you wont have a better time then now to replace them, you can either either reuse your stock units or take the easy way out like I did and buy a new pair of hubs and all hard ware. I'm not trying to save my stock wheel hubs and rusty bolts, not worth the hassle and head ache. Some spindles I have seen come with the hubs, I didnt want used hubs so I bought a bare set of spindles.
You sir, are my savior. I plan on doing the Corvette pistons for the look, but upgrading the braking system because we all know these rotors looks dime sized with a 17" wheel or bigger.

Also truck bed lines paint works really well to paint a set of rusty spindles to an almost flat black. You really wont ever see them again, but I dislike working with rusty looking stuff when I have the chance to fix it.

I have done it twice works great. You can use your stock lines you just get to have some fun Bleeding them. I even have a set of LS1 Lines but just so I can use them to get SS Lines made for myself.
Anyway its rather easy. I have the stock LS Rotors and Calipers sitting here pay shipping and say 65.00 and you can have them.

Instead of doing the whole kinuckle and everything. A place called JandM products makes a bracket to put C5,C5 zo6, and C6 calipers on. The brackets are like 250 bucks and then calipers are about 250. for the front. Just another option. Actually i think newer vette bakes are the same as LS1 brakes, so you might not need the knuckle with this brakcet.

The absolute cheapest and easiest way to do this is to just buy the LS1 spindles. You don't to spend any extra cash on those brackets, which are nice but way over priced. The spindles swap right out with your current ones.
I paid 50 bucks for both spindles, brake calipers, pads and rotors from a junked car. Did the swap in an afternoon. Well worth it!

LS1 brake upgrade = 98+ fbody spindles, calipers and rotors. There are no other options for doing the LS1 upgrade.
Using the J&M/Trackbrackets/Bob Bishop design bracket or any of the other brackets out there (that are not of the same quality..) is the C5/C6 upgrade and not related at all the LS1 upgrade. Those brackets that allow use of C5/C6 calipers use the C5/C6 rotors for the front, not the LS1 rotors. The base C5 rotors are basically another inch bigger than the LS1 rotors, the C6 Z51 and Z06 packages are even bigger. The C5 calipers and LS1 calipers have the same outward appearance but are not the same.
